Policy for Handling Food Allergies And Food SensitivitiesOUR GOAL: To provide customers/students with safe, nutritious meals. Students will need to contact the Campus Dietitian, Theresa Logan, at 704-894-2601 or email: thlogan@davidson.edu for an appointment. Students should bring Physician documentation stating food allergy or food sensitivity, e.g. physician prescription. Once the student and campus dietitian meet, the campus dietitian will review the weekly menu via internet at the initial appointment to familiarize the student with dining service resources. Once the student and campus dietitian meet, the campus dietitian will arrange for a meeting with dining service production staff to answer any recipe and food ingredient questions. The student will communicate with production staff and dietitian regarding food ingredient questions. For prepared foods items, the student and production staff will need to review recipes and/or food labels. The Production Manager or Supervisor on duty will assist the student with alternate menu selections as needed. For specially prepared food items, the time of pick up will be determined by the production staff. As necessary, the production staff prepares food using the following precautions: --Wash hands and puts on non-latex gloves. --Use clean pans, knives, utensils and work surfaces. When a student is suspected to have an allergic reaction, call 911. Provide address of the Dining Center and state that a customer is having an allergic reaction. A member of staff should stay with the individual until medical help arrives. Someone else should be sent to watch for and direct medical personnel to the customer in need. The student who carries an Epi-pen may use it in event of an allergic reaction. Staff will immediately call 911. Food allergy and Food Sensitivity training will be reviewed annually for Dining Services staff.
